Easy Slow Cooker Italian Roast




 I love to use my Crock Pot in the summer time cause it is too hot to use the oven.  So, when I want something that is not grilled, I use my slow cooker!  This is an easy dinner to make and is also a great meal on a cold winter's night!  


This is quick and easy to prepare; about 10 minutes.  Let it slow cook on low about 8-10 hours and you will have a tasty, fall apart roast with a rich sauce!

Easy Slow Cooker Italian Roast

2 to 2 1/2 lb beef pot roast
1/2 tsp salt
1/2 tsp garlic powder
1/4 tsp pepper
4 1/2 oz sliced mushrooms (fresh or canned)
1 small onion sliced (you can dice if you prefer)
24 oz. spaghetti sauce
1/4 cup red wine
Hot cooked pasta

Combine salt, garlic powder and pepper, rub into all sides of roast.  Place in slow cooker.  Top with mushrooms and onions.  Combine sauce and wine, pour over meat and vegetables.

Cover and cook on low 8-10 hours or until meat is tender.  Slice roast and serve over pasta with the sauce.   

Easy, peasy!  Hubby added more salt and pepper (below) to his.

Crock Pot Lasagna

Lasagne are a type of wide, flat pasta, possibly one of the oldest types of pasta. Lasagne, or the singular lasagna, commonly refers to a culinary dish made with stacked layers of pasta alternated with sauces and ingredients such as meats, vegetables and cheese, and sometimes topped with melted grated cheese. Wikipedia

Characteristic
Thick, wide noodles with smooth or ruffled edges in form of sheets or ribbons. Traditionally the sheets are 10 to 13 inches long and 2 to 3½ inches wide. Modern sheets are available in 4 x 6 inches or 3½ x 5 inches size.

Today I am sharing my Crock Pot Lasagna recipe.  This dish cooks perfectly at 4 hours and is just right for 2 people.  Serve this with a salad and/or homemade breads, rolls, or biscuits.  I served mine with homemade bread.

If you're like me and have no patience when it comes to making baked lasagna, this is the recipe for you!


The first thing you will do is brown your ground beef in a skillet then drain.



You will spoon 1 cup of the sauce into the bottom of the crock pot.


Add a layer of lasagna noodles.  You use uncooked lasagna noodles. The noodles will soften up perfectly as it cooks. Once the lasagna is done, they will be so very tender and have a great texture! 
When I’m putting in the lasagna noodles, I usually  break one in half  so that it’ll fit in the crock pot.



Add a layer of meat, cottage cheese then mozzarella.  Repeat the layers one more time.




Sprinkle Parmesan cheese over the top and let cook for 4 hours.


Look at all that deliciousness! So cheesy, so saucy, so awesome!


Crock Pot Lasagna

1 lb Ground Beef
1 ½ c Cottage Cheese
Lasagna Noodles
1 ½ c Mozzarella Cheese
1 jar (24 oz) Spaghetti Sauce
 2 Tbsp Parmesan Cheese

Brown ground beef; drain. Spoon 1 cup sauce in bottom of crock pot. Mix remaining sauce with beef.

Place 2 uncooked lasagna noodles. length-wise on sauce. (I break on piece in half, place whole piece in middle, half pieces on either side. Spread ½ the meat mixture on top. Spread ¾ c of cottage cheese on top of meat. Sprinkle ½ cup mozzarella cheese on top of that. Add another layer of the noodles. Add remaining meat mixture, cottage cheese and mozzarella cheese. Sprinkle parmesan cheese over top.

Cook on low for 4 hours or until noodles are tender.

Slow Cooker Pork Chops With Potatoes and Mushrooms


I am tired of cooking pork chops same old way.  So, I have been on a quest to find recipes for them.  This one pot meal is so easy to make and super delicious!  This is comfort food at it's finest and it is a hearty meal every one will love!
In a 5-qt. slow cooker, combine the first seven ingredients. Stir in potatoes, carrots and mushrooms and onion. Stir until coated. 



Top with pork chops. Cover and cook on low for 4-6 hours or until potatoes are tender.




Slow Cooker Pork Chops with Potatoes and Mushrooms

Ingredients

  • 4 pork chops, loin or center cut, bone in or boneless, 1 inch thick
  • 1 can (10 3/4 oz) condensed cream of chicken, mushroom or celery soup
  • 1/4 cup dry white wine
  • 1/4 cup chicken broth
  • 1/4 cup dijon or yellow mustard
  • 2 tblsp grainy mustard
  • 2 tblsp garlic, minced
  • 1 tblsp thyme, dried, ground or leaves
  • 1/2 tsp salt
  • 1 tsp pepper
  • 6 medium potatoes, cut into chunks or 2 pound bag of little round potatoes
  • 1 large onion, sliced
  • 1/2 pound mushrooms, any variety, fresh, sliced optional, more or less to taste
  • 2-3 large carrots peeled and sliced to 1/4 inch thick or a bag of baby carrots optional, more or less to taste
  • 2 tablespoons cornstarch or potato starch - optional to thicken if desired

Instructions

  1. In your slow cooker stir to combine soup, wine,chicken broth, mustards, garlic, and thyme.
  2. Add potatoes, carrots, mushrooms and onion.  Stir until coated.
  3. Place pork chops on top.
  4. Sprinkle pork chops with salt and pepper.
  5. Cover and cook on low for 5-6 hours or until potatoes are tender and pork chops are cooked.
  6. Remove pork and vegetables from slow cooker using a slotted spoon and serve.   
  7. This next step is optional. Turn your slow cooker up to high or remove liquid from slow cooker and pour into a saucepan.
  8. Using a ladle or soup spoon, remove some of the liquid in your slow cooker into a coffee cup.  Add starch and stir until no lumps remain.  Dump coffee cup contents into your slow cooker juices and stir until blended.  Bring liquid to a boil to thicken the gravy for serving.
  9. Add gravy on top of pork chops and vegetables. Serve immediately.

Mississippi Roast




This is, without a doubt, the best pot roast I ever made.  I made this for dinner and it was my husband, daughter, her boyfriend and myself.  I made a homemade gravy using the sauce and served it with mashed potatoes and green beans.  There was not a drop of food left!  And with just 5 ingredients, it is so easy to make!

It comes out so juicy and tender.  It is a fall apart, melt in your mouth chunk of deliciousness!  As a matter of fact, it just came right apart when I took it out of the Crock Pot.

So. the recipe calls for  pepperoncini peppers but I forgot to pick them up.  So. I had some roasted red peppers that I used instead.
Mississippi Roast
Prep time:  5 min  Cook Time:  8 hours  Serves 8

Ingredients

  • 1 (3-4 pounds) chuck roast
  • 1 packet ranch dressing mix
  • 1 packet au jus gravy mix
  • 1/4 cup butter
  • 4-5 pepperoncini peppers

Instructions

  1. Place roast in the slow cooker and sprinkle the top with the ranch dressing mix and the au jus mix. Place peppers on top of the mixes, and add the butter.
  2. Cook over low heat for 8 hours. Serve with noodles, rice or mashed potatoes.

Slow Cooker Stew Beef In Mushroom Gravy

 Don't you just love comfort food on cold, chilly evenings?  I know I do!  This mouth-watering recipe will leave you wanting more!  The beef cooks for hours so it just falls apart and is oh so savory!



You can serve this over mashed potatoes, noodles or other pasta of your choice or try over rice.

Slow Cooker Stew Beef In Mushroom Gravy

*This fed 3 of us with 2 having seconds.  Not sure of serving size
Ingredients
  • 1  1/2 lbs Stew Beef, cubed 1-1 1/2 in.
  • 1 tbsp of salted butter
  • 2   tbsp olive oil
  • 1/4 lb sliced mushrooms
  • 1/2 tsp seasoning salt
  • 1 tbsp black pepper
  • 1 cup beef broth
  • 1 tsp brown sugar
  • 1 tbsp Worcestershire sauce
  • 1 tbsp ketchup
  • 1/2 teaspoon dried thyme
  • 1/2 cup diced onion
  • 1 1/2 tbsp beef broth
  • 1 cloves of garlic, minced
  • 1 tsp gravy master
  • 1 tbsp cornstarch
Instructions
  1. In a Large skillet, heat the oil and the salted butter over a Medium heat
  2. Add in the stew beef, season them with seasoning salt and black pepper.  Saute until slightly brown
  3. Transfer into yslow cooker.  Be sure to scrape pan to get ALL the flavoring into the slow cooker
  4. Add the beef broth, Worcestershire sauce, mushrooms,  and brown sugar.  Mix in the ketchup. Sprinkle the beef with thyme, diced onions and garlic.
  5. Cook on low for 5 hours.
  6. Combine water and cornstarch in  small bowl ,  pour into the crockpot. Add gravy master; stir until sauce has thickened.  Cook  for an additional 15 minutes.
